Harvests cycle biannually, groves produce at different years in those cycles.
To Date, all harvests, except for 2007, have been processed into table olives, following time-honoured receipts from Italy and Spain. All varieties can be utilized for total harvest oil production, albeit with different fruit mass/oil ratios.
Trees were planted for easy access for slashing and mowing; to date, picking was done by hand and low-friction olive rakes onto mats, potential access for picking machine, but not advised due to heavy toll (damage) to trees.
Current pest and weed management via organic regimen (all preparations expensive), but recommend traditional methods with systemic agents.
Rainfall variations from 600 mm p.a. to 1300 mm p.a. (detailed charts available back to and including 2008)

Water Assets:
